French toast with plums

It’s been a while since I’ve made french toast. I made the batter a bit different to the last french toast recipe I shared as I had a banana that was going too ripe so I included that.

Preparation time: 15 minutes
Cooking time: 3 minutes

Ingredients

  • 25ml plant-based milk
  • 1 tbsp maple syrup
  • 25g gram flour
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp mixed spice
  • 1/2 banana
  • 2 slices of bread
  • 1 tbsp oil
  • 2 plums, deseeded and sliced
  • a small handful of roasted hazelnuts
  • maple syrup

Instructions

  1. In a wide bowl mix together the milk, maple syrup, flour and spices until smooth.
  2. Mash the banana and stir into your mixture.
  3. Dip the bread into your mixture to coat both sides.
  4. Add the oil to a large frying pan and heat over medium heat.
  5. Add both slices of bread to the pan. Cook your bread on one side for about 1 minute until golden underneath, flip and cook for another minute. You can spoon any remaining batter onto the bread before flipping. Using tongs to hold up your bread, cook each crust for about 15 seconds to crisp up.
  6. Serve with plums, hazelnuts and a generous drizzle of maple syrup.
