I tried making a vegan Christmas cake

Now that I’ve moved out, and with lockdown and all, we’re planning on having Christmas at home, just my partner and I. I haven’t had Christmas cake since I turned vegan and my experience of making a Christmas cake is helping my mum cream butter and sugar together. So, we’ll see how it goes.

I looked at the BBC Good Food’s and Mary Berry’s Christmas cakes to see what I needed to do. I’ve made a smaller cake than both recipes since it’s just the two of us eating it. Also, I didn’t want to use any alcohol, so I let the dried fruit soak in apple juice to give them a bit more moisture.

I’m not planning on adding any liquids to it. So, it’s now just the wait until Christmas to find out how it turned out!

I did make a baby Christmas cake alongside the main one. This one tasted so good! So, I’m hoping I haven’t over or undercooked the main cake as it’d be great to have it taste like the mini one!

I’ll let you know how it turned out!
