Hello and welcome to another what I eat in a day post! These are meals from a weekend and since there’s always more time at the weekend, I made them fresh on the day rather than them being leftovers from meal prepping. But they’re all quick and simple meals to make, so they’d be easy enough to put together on a weekday. I’m never entirely sure what to write in these intros so let’s get right into the post.
Since it’s getting pretty cold in the UK I’ve started having hot breakfasts. Today I had porridge, and you can’t go wrong with that. It has blackberries, chia seeds, peanut butter and a generous drizzle of maple syrup in it. I also had a crisp sandwich as a pre-breakfast snack, but let’s not talk about that so that I sound healthier! Haha.
I’ve been digging this curry sauce lately and I can’t count how many times I’ve had chips and curry sauce in the past couple of weeks. I served this with some roasted chickpeas to boost the nutrient and protein content in this meal. A few weeks ago, I made this meal with my partner when first trying out the sauce and he complained (in the nicest way) that I made my chips too much like fries so I made sure to make them extra chunky this time.
I had another simple and easy meal for dinner. I had rice with tomato and parsley sauce (salad tomato, mushroom, tomato purée and parsley), kidney beans and a bit of avocado. It was a really filling meal and I was stuffed by the end of it. But, not quite full enough to not be able to junk out on something sweet.
I made these brownies earlier in the day. They were pretty good. So good that I managed to wolf down three throughout the day.
Finally, I had this delicious homemade crumble made by my mum. It’s made with apples, blueberries, blackberries and raspberries (all homegrown!) with oats as the topping.
