Lemon drizzle cupcakes

I’ve had a pretty low supply of junk food recently. So, I was in need of some sugary goodness and what’s better than lemon drizzle cupcakes?

I made these with oat flour so they have a wonderful flapjack flavour on top of the brilliant bitterness from the lemon juice.

Serves: ≈16 cupcakes
Preparation time: 10 minutes
Cooking time: 10 minutes
Total time: 20 minutes

Ingredients

Dry ingredients:

  • 200g oats (or oat flour)
  • 150g coconut sugar
  • 2 tsp baking powder

Wet ingredients:

  • 150ml oat milk (or other plant-based milk)
  • 50g coconut oil, melted
  • 2 tsp apple cider vinegar

Extra:

  • Juice of half a lemon

Instructions

  1. Preheat the oven to 180°C/ 350°F/gas mark 4.
  2. Blitz the oats in a food processor until they form flour.
  3. Mix all the dry ingredients together.
  4. Pour in the wet ingredients and stir well.
  5. Line a cupcake tray with cases. Pour the cake batter into the cases until about 1/2-3/4 full.
  6. Bake in the over for 10-12 minutes.
  7. Once cooked, let cool for about 5 minutes and then drizzle over the lemon juice.

Bonus

For chocolate cupcakes:

  1. Preheat the oven to 180°C/ 350°F/gas mark 4.
  2. Blitz 180g oats in a food processor until flour forms.
  3. Mix the oat flour, 1 tbsp cacao powder, 150g coconut sugar and 2 tsp baking powder together.
  4. Pour in the wet ingredients (quantities the same as above) and stir well.
  5. Line a cupcake tray with cases. Pour the cake batter into the cases until about 1/2-3/4 full.
  6. Bake in the over for 10-12 minutes.
