3 easy sandwiches

These sandwiches make a great staple for a packed lunch. They’re quick and easy to make so are also perfect for an afternoon snack. Each sandwich is packed full of nutrients and energy, so will keep you energised and motivated for the rest of the day.

Ingredients

  • 1 tsp oil
  • 40g mushrooms, sliced
  • 1/8 tsp smoked paprika
  • salt and pepper
  • 1/2 salad tomato, sliced
  • handful of lettuce
  • 2 slices of your favourite bread
  • wedge of lemon

Instructions

  1. Heat an oiled frying pan over medium heat.
  2. Add the mushrooms, smoked paprika, and salt and pepper to taste. Sauté for 5 minutes.
  3. Layer the salad and mushrooms on your bread and then drizzle over the lemon juice.

Simple salad sandwich

Ingredients

  • 1 tbsp hummus
  • 1/2 salad tomato, sliced
  • a good chunk of cucumber, sliced
  • two slices of onion
  • 2 rings of pepper
  • handful of lettuce
  • 2 slices of your favourite bread (or other bread–I used a French stick)
  • 1 tsp sesame seeds
  • wedge of lemon

Instructions

  1. Prepare the salad.
  2. Spread the hummus onto all slices of bread.
  3. Layer all the salad onto your bread, sprinkle the sesame seeds on top and drizzle over the lemon juice.

Classic peanut butter sandwich

It turns out that banana and kiwi go great together!

Ingredients

  • 1 tbsp peanut butter
  • 1 small banana, sliced
  • 1 kiwi, sliced
  • 2 slices of your favourite bread

Instructions

  1. Spread the peanut butter onto all slices of bread.
  2. Layer the banana and kiwi onto your bread.

You could spread jam on these sandwiches too, but I find that the fruit adds enough sweetness and flavour that they don’t need jam. This sandwich also taste great as a toastie.
